I'm definitely on the "just learning" side of smoking. I picked up a Big Chief from Craigslist about 2 weeks ago and have already smoked a chicken - though I had to finish on the grill the meat turned out great. I did a bit of reading and found out that this was pretty common with the BC, since it's more of a dehydrator so I went out and bought an EECB. I've started the first batch of jerky I plan to do on the BC and just picked up a pork butt and found the "basic pork butt" instructions on the forums. I'm planning on doing that this weekend. I'm glad to see that such a devoted group exists and I look forward to learning a lot.
