Hello everyone, my name is Wayne and I am new to the site.  I've been smoking meats for 5 years now but just really developed my craft over the past couple.  My favorites things to smoke are Ribs and Loins because of the shorter cook periods and I can do them every time the KC Chiefs play.  (it's a superstition thing).  I've done quite a few Boston Butt's when I can stay up most the night manning the smoker.  I use a 30 year old 250 gallon fuel tank that is a RFS.  It was not made right but I know how to manage it.  I have two more tanks I'm looking to build this summer but hoping to learn the correct methods before I start building.  Any and all advice is always welcome.  I look forward to posting pictures of my ancient rig and all the great food that comes out of it.  Hoping to start competition this summer at my local Fall Fun Fest in southern Illinois and maybe do the Thunder on the River cook in Paducah, KY at the end of September.  So with no more to be said, lets get cooking!!!!
