Need to preserve rubbed brisket for 1 week

I roll it outside my brick garage and put it under the overhand on my concrete driveway.

Not much chance of a fire unless I forget to punch a hole in the foil I line the bottom of the smoker with.

If it should catch fire the smoker should contain it.

At least mine will.


Don't know where you have it, but don't burn your house down---unattended!

If it was fresh then throw it in the freezer.

If it had been previously frozen I agree with the others - cook it in the oven. No need to so it low and slow - some folks do it hot and fast. It will still be a tasty piece of meat.
 
Well you guys inspired me to throw it in the smoker after I got home from work. I figured that way I would be able to load wood for 4-5 hours before going to sleep. I'll just suck it up and wake up a couple times to check the temp. It'll make for a good lunch tomorrow!

I run the smoker outside on a brick patio and it seems like it will be safe for 3-5 hours unattended.

Great---Just thought I'd throw that in there to remind everybody, because some, like me---have our smokers at a place other than brick.

Mine is on a wood porch, under a wood ceiling, on an all wood log house.
