Here it is off of the smoker. It cooked a lot faster than I had expected. It is more tender than I wanted it to be. I wanted more tug.

Cubed the point with more rub added and some sauce. ready to go back on the smoker.

The flat is now wrapped and taking a nap in the ice chest wrapped in foil and towels. Burnt ends are back on the smoker. The pan drippings are in the fridge to seperate.

Thanks Yes KB with a little backyard.  When i went to bed it was 240. When i woke up and probed it. it was 245 and IT of 199. Burnt ends are almost done.

  Looks absolutely DELICIOUS.   I'll be waiting on the BE's.     See, I give credit where credit is due!  GREAT job David.      With the forecast, looks like my half of round three won't be until Monday.   I'll just have to munch on the woman candy you'll be FedEx'ing in the morning.  lol

I have a brisket in the fridge...... Took it to the freezer today, and brought it back in. I was going to do a turkey, but its in the freezer and its now Wednesday and I don't do rush thaws. Hmmmm... can you wrap a brisket in bacon, ya think?

Thanks Foam i would only think about bacon if it is a well trimmed flat. A packer has a lot of fat. I do just a little trim, not much.  Mine was to tender IMHA. yes everyone loved it.
