the MES does not like to smoke at low temps unless using really dry sawdust........I don't expect mine to do much under 200......but then again that's why I have my cold box set up that is piped in from the MES for cold smoking......
I did some smoked salmon recently and the recipe I used said to cook at 90 degrees for 2 hours then 165. So I did it at 100 degrees (minimum it can do) and I got some smoke. After 2 hours went to 165 and it smoked fine. I was using small chips.
