Well, yesterday we did the maiden test with smoking a pork loin. OMG!!!!! that was so GOOD!! It wasn't heavy on the smokey flavor, the rub was tasty and it had a nice little pink ring, juicy and everyone was happy. Couple of lessons learned: 1) We do need to modify with a gasket around the lid, 2) Use chunks rather than chips And of course in all the excitement I didn't take pictures. :/ Can't wait for the bibs tomorrow.
