Hello all!

JD here, up until now I've been a passive member of this lovely community.

I live in far Eastern NC just outside of the biggest Marine Corps base in the US.

I am currently smoking with a Chargriller with SFB. I am very appreciative of the mods and demos that many of you have taken great time and effort to create and post on here.

I have already added thermometers at grate level and extended the chimney. I've done one good smoke so far, a beer can chicken and a rack of ribs and I am looking forward to doing so much more.

One of my other hobbies that led me into this realm is charcuterie. For a year now I have been processing my own sausage type products using natural casing and I'm looking forward to combining the two hobbies.
