well the baby backs are ready togo, I`m gunna fire up the smoker around 10 am , should be ready for the meat by 10:30 or so. I`m planning on taking the meat off around 2:30 or so for it to rest an hour before eating
oh ya and the next door neighbour is bringing over some home made sausage

Looks like the perfect start to the holiday, Don! The montreal steak seasoning on the ribs has me interested. I've got a bottle of that stuff in my spice cabinet and haven't used it yet ... looking forward to seeing how everything turns out!
 
Hmmm they let you use Montreal seasoning without being in the city? And...heck the label has ENGLISH on it! LOL...

Looks like a winner Don... you have good taste...even tho you DO add a "U" to "labor" ;{)

well I`m using oak to start my coal bed, gunna use some Sugar Maple charcoal I`m trying out, and my main fuel for the day is good old Apple wood

I use only a little of the steak spice, `the main rub is mostly the chicken spice, which is about 90% paperika I think
 
I hope my family knows just how hard I worked to smoke these ribs for them

I keep having to get up and add wood and check the temp, and come in here to post some more pics, Damn this is very labour ( canuck eh) intensive

I found this charcoal at a local grocerie store at the checkout I only saw it the one time it was 7$ a bag and I bought all three they had, I`ve never seen it again the manager of the store told me it was back ordered. it`s great keeps a good temp for a longtime.
but I do most of my smoking with wood the coal is only to maintain the temp level
 
You post a nice Q-view and I'll nominate ya :{) Lord knows ya have met the requriements. Soo many have lately...this place has been ROCKING for sure!
 
I agree Rich-both with OTBS and what a labor instensive day ol Don is haveing-looking good Don-mine going on soon
