I cruise the meat section of the local grocery looking for the "Special Today!" tags. Just means that the "Use or freeze by..." date is really close. Usually 2 or 3 days away. Found some ribs at half price. I was surprised at how meaty they were.


Smoked with a mix of equal parts pecan, apple and hickory. In the smoke about 2 and a half hours at a smoker temp of about 275-ish. I couldn't get a low temp today to save my life so I just let 'em go at 275 to (sometimes) 290. Into foil with about a cup of beer and half cup of bbq sauce. When foiled, I ran the temp up to about 320 to 330. After 2 hours, they came out of the foil, got sauced with a brown sugar based bbq sauce and back into spa. Smoker temp back down to 275-ish for the finish. Some carmelization of that sweet sauce.

These were my personal best for pork ribs. The smoke mix worked great, the sauce was what you expect of a sweet sauce, and the bite was perfect. They didn't "fall off the bone", but when you bit them, the meat came off clean. Juicy, smokey goodness and I think I'm gonna dream about eating these tonight :)  My wife was very impressed. heheheh... always a good thing.
