  1. Hello everyone!!!

I was searching the net on company time, looking for a new Pulled Pork method and I found the most awesome site ever... Smoking Meat Forum!!! I don't know how I lived, grilled and smoked all these years without knowing about this. I have been surfing around the forums, reading different strings and I think I have genuinely learned more in the past 3 hours than I have in the past year of trial and error cooking.

Here is a little about me: I'm a 28 year old chef looking to open my first restaurant in the next 2-3 years. I'm hoping to soon open a BBQ takeout counter and catering service, which has been a dream of mine for years, but I'm trying to learn the fundamentals and develop my own personal flavours first. I am no stranger on the Q by any stretch of the imagination but have just started learning the art of smoking over the past 2 years.  This forum has been an incredible resource in the few hours I've used it and I am sure, with all of your knowledge and experiences, I may be able to fast track my plans and open my place sooner than anticipated.

Right now, I'm smoking on my homemade propane UDS which is doing wonders for me. Hopefully I can get some pictures up soon to get some feedback on how it can be improved. If anyone out there has a similar setup, I would love to compare notes on the subject.

I have already had some great advice from some of the members and I would like to thank all you for the great tips and methods for smoking.

Just wanted to send a huge shout out to everyone of you smoking enthusiasts and I'm looking forward to this new world SMF has opened up for me.

Happy Smoking & Long Live the Q,

    Johnny K. aka JohnnyBigSmoke

First off welcome Johnny to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

here. So here's a link to a tutorial on how to post your Qview so we can see what your doing.

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Oh yea there's no stupid questions we were all there in the beginning and we just really like to help others enjoy the fabulous smoked foods that we do. So again

    Yo JohnnyBigSmoke

It will be nice to have a pro chef around, we can learn from you too.

As for opening a BBQ joint, there is one sure way to get lots of customers when you open.

Send each SMF member who originally welcomed you to SMF a round trip plane ticket, plus room, and one week free eats at your new BBQ shack, don't leave Jeff out the site owner.  If you send the above I guarantee you will have best BBQ joint opening ever. :)

    You'll love it here!

  16. Welcome Johnny

Been smoking meat for 33 years and it does not change, I am smoking tonight and it is as if I started yesterday. Man what an addiction!!! I love it. Great folks on here with lots of wisdom and great advise Welcome Again
  17. It's funny you mention that... I've been working on a sweet and sticky Jack Daniels BBQ sauce for about 6 months now... I'm on the 18th batch and STILL have not got that perfect flavor I'm looking for!!! Don't get me wrong, right now its a damn good sauce now but hopefully when I'm done, it will be nothing short of incredible!!!

I may also be fooling myself into thinking I'll ever be finished... It seems to be an everlasting work in progress, but it is definitely a labor of love!!!
