My wife has a meatloaf recipe that we call "Sweet Loaf" because she mixes a honey/ketchup glaze that she mixes into the meat. It is basic meat loaf-ground beef, diced onion, seasonings, breadcrumbs then she mixes honey and ketchup together and puts some in the meat mixture and we use the extra to glaze the meatloaf. Decided to smoke it this time but wanted to try something a little different. Cut the tops and bottoms off of some green peppers and cleaned out the seeds. Then packed them with the meatloaf-kinda like a stuffed pepper. Had a little extra meat so I made one regular mini meatloaf. Also took an eggplant and cut it in half then scooped out the inside then filled it with a mixture of shrimp, ricotta cheese, pasta sauce, parmesan cheese and garlic. And made some abts-put half a slice of genoa salami, cream cheese and wrapped in bacon. Here are some pics
