Is it mini meatloaf or stuffed peppers? qview

    My wife has a meatloaf recipe that we call "Sweet Loaf" because she mixes a honey/ketchup glaze that she mixes into the meat. It is basic meat loaf-ground beef, diced onion, seasonings, breadcrumbs then she mixes honey and ketchup together and puts some in the meat mixture and we use the extra to glaze the meatloaf. Decided to smoke it this time but wanted to try something a little different. Cut the tops and bottoms off of some green peppers and cleaned out the seeds. Then packed them with the meatloaf-kinda like a stuffed pepper. Had a little extra meat so I made one regular mini meatloaf. Also took an eggplant and cut it in half then scooped out the inside then filled it with a mixture of shrimp, ricotta cheese, pasta sauce, parmesan cheese and garlic. And made some abts-put half a slice of genoa salami, cream cheese and wrapped in bacon. Here are some pics

    My dinner-a mini meatloaf/stuffed pepper, some abts, a wedge of the eggplant and half a baked potato from the smoker.

    Wow! Those all look very good, I dont really care for eggplant but stil looked good to me. I am going to have to do a meatloaf smoke like that.

  16. That really is some fine looking food. Some time ago I posted some q-view and a recipe for my favorite mini-meatloaves. I am curious as to what yours is. I love them and did them on the smoker and they turned out great. Yours have a beautiful smoke ring. Nice work, you're making a man hungry. Maybe it would be good to get a thread going on mini-meatloaf recipes, as it seems other folks here seem to like them too. Kudos on the peppers as well.

    The meatloaf is just a normal mix of ground beef, diced onion, seasonings (garlic salt, cbp, etc.) But then my wife mixes honey and ketchup together in a separate bowl, about 2:1 honey to ketchup (we like it sweet) and mixes some of this glaze in to the meat mixture and saves the rest to glaze the top. Sometimes she will do this and make small meatballs and put them in a mini muffin pan and bake em (short cooking time that way). Very good.
