  1. so i got me a big chunck of smoked gouda cheese this weekend. I want to make a fatty with it, rite now im thinking thin sliced rib eye, jalapenos, and the gouda. I don't wanna put anything that will over power the cheese. Any ideas ???

With Gouda, I'd do something radical and go with sliced grapes and jalapenos.  I love smoked Gouda and grapes together.

When I get the hankering to make a fattie I look at what others have done here for inspiration.

Using the handy dandy search tool or looking at the other forums

Here's what I found..by looking at the fattie forum.

Sweet Italian sausage wrapped around strips of ripe cantaloupe, the smoked gouda and crumbled walnuts. then instead of bacon, wrap it in Prosciutto.

Crispy smoke beacon. jalapenos, onion, and walnuts

hot ,crisp ,crunchy it will give a fair fight to the cheese
