Hey Juanito!! First Brisket on the Junkyard Smoker

  1. I just cooked my first 2 briskets . Everyone loved them . I trimmed the point off, but did`nt trimm any fat. The smoke ring was about 1/8 in. around . Next time I will trim some fat and see what the difference is.
    I like beef fat.
    Had a great flavor and a good presentation on the smoke ring I might add. Can`t wait to get to work so Juanito can try it !!
    We have been pondering on the Idea of getting in a BBQ contest And I believe between we three amigo`s , we could be in the money. It may not be top billing, but I think we are getting close !!!!
    Oh, and the appitisers were JUMBO shrimp ABT`s , If you like shrimp and you like bacon, then you will love these.
