Hey Gang...

    I have a lot of interest in grilling in general, but find I want to try low temp smoking.  I don't have anything fancy, it's a Char Griller Akorn Komado...I think it's called.  Does a decent job of holding a temperature (of course, nothing like a green egg...or other)  So, I hope to browse the threads and see what's up.  Name is Gene, and I live in central Illinois.  (south of Chicago 1.5 hours)

    Welcome Gene! You came to the right place. Tons of good information on these forums. A lot of what you do will be trial and error but jump in there and enjoy every minute. For me. backyard smoking became a passion. Now I do lot's of events and catering and love every minute of it!

    Thanks all.  I tend to take the not so obvious road....tonight, I bought a beef roast.  It was a 2 pounder.  About 2.5 inches thick.  Put on a dry rub, wrapped it all up for 2 hours.  Got the grill going, lump charcoal on the edge, got it to 300 degrees.  Put the roast over the heat, seared it for about 3 minutes each side.....put it on the upper grate, away from the heat.  Shut down lower vent, upper vent open 3/4 inch.  275 for 2 hours.  Turned out really good.  Strong smoke ring, smoke flavor, very tender.  I was surprised.
