Hello from north Louisiana

  1. I'm Joe from just north of Bossier City Louisiana. 51 retired military, I've been smoking meat for years the way my father and grandfather taught me but lately I've gotten into making my own sausage, that's how I found you guys. I've owned a New Braunfels vertical offset smoker for years and it has served me well, but I recently bought an MES 30 and the MES cold smoke attachment for the sausage and now I'm thinking where have you been all my life, anyway I'm glad to be here, the site looks great.

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
