Hello from the Kodiak.
Been smoking meat for about 17 years with a big chief but recently upgraded to smoke hollow 38 incher, in think it is called a #6.
Got tired of the big chief not getting hot enough and now I cant get my smoker cool enough. Wouldnt you figure.
I prefer to smoke wild game but I have nearly an endless supply of salmon but have never truly been happy with the results. It always seams raw on the inside and too moist. I am hoping the smoke hollow will solve this problem.
Originally from western PA but have been stationed in Alaska for the last ten years with the Coast Guard.

Hello, and welcome to the SMF. Sounds like you'll be trying some brined salmon in the future. I used to write a montly newsletter for a fishing club, it was called "Tight Lines for Reel People".
 
First off welcome AK fly to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
