Hello Fellow smokers and grillers :-)

    My name is Jon mitchell ,I am a 39 year old back up singer/musician originally from Hartselle Alabama. I have enjoyed preparing food since I was old enough to put the dishwasher down and reach the cereal .AND they wondered why I always got the prize .I started grilling early as well as following my family who have been in the food ,bar ,and  bootlegging business for as long as I've known .But it was the tradition of barbeque (shoulders ,chickens ,butts ,and ribs) done the traditional way that really struck a cord with me .in the early days my great grandmother would tell me stories from the days of no cars, ,  no electricity,  and slaves receiving what was then considered waste (ribs) and using a method of burying them in the ground to make them tender that really interested me. It seems many,  many  others are as well or we wouldn't be here discussing this :) I always believed that the old time tested ways with a little home made sauce couldn't be beat . I have found that true a in a couple of  unexpected placements in local shade tree competitions.(first place of coarse) I  have used everything from a hole in the ground to , bricks and blocks stacked and sealed with the vent opposite end of fire to pull across meat to achieve that.45 dollar  Walmart specials have served their purpose as well . I'm moving on now since purchasing land and have found that I love the versatility of the smokehouse (cold smoke) with the occasional butt or shoulder on the closed brick pit  .I love and have started raising my own meat (goat) being a primary  one  and have found the joy of being self reliant in providing not only for my family but also the critters that I intend to eat .my biggest pride of all though still remains in my sauces. It seems I can take something my brother smokes which isn't bad and add my sauce and suddenly his wife starts to Brag,  about how he is catching up to me. Its all good,  and I think that is what I love the most .being able to do the impossible! in our way to busy,  way to fast,world  with kids, and sometimes parents to with their faces buried in their cell phone devices (sad I know) and bring all of our friends and loved ones back together .I find no greater joy than that of bringing loved ones TOGETHER .it used to be every day . then that turned to get togethers on Sundays . now that the older have passed and the newer have been born that changed to never. I thank GOD every day that  I was able to find that one thing that has brought us back together ,and I pray it has and does the same for you and your loved ones. The morals and things that made this country great started around  the breakfast table every morning. when children would still  look to parents( instead of down in their ipads )as their guides and main influences and I pray with all my heart we can find those days again.     Welcome to he board! Great that you're trying to keep the old ways in memory. Boards like this are good for sharing new methods, but we an all learn from the old ways.

    Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject.
    Great introduction to yourself!! The old ways hold a charm and place in my heart to. You are right BBQ is best when it is shared with family and loved ones. It can give us that little bit of a reason to gather together and pass on the lore and wisdom that are our family traditions.

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
