Hello all! I'm coming at you from Eugene, Oregon in the great Pacific Northwest, and I'm really glad to be here. I just purchased a Southern Pride DH-65 to move from an occasional hobby smoker to a barbecue take-out owner, yeah, that's me. Moving up from a charcoal fired red bullet to an electric and stainless pro cooker is a shock to the system in every possible way, wow. I've been a member here for many months, but I haven't really been active, but now I will, as I move from commerical rubs and sauces to home recipes, and learn the ins and outs of professional level smoking. Wow. I'm grateful for all the help,advice and and guidance I can get. Owning and operating a take-out is where I'm headed,so thanks for the help in living it.
