    New user here from Louisville, KY (go Cards!).  Anyway, I have been smoking for a couple of years now and have come across these forums quite a few times while doing research on different projects.  Seems like a great community and the information is fantastic!  I have recently gotten into curing (bacon, corn beef, pastrami) and I have enjoyed the results a great deal.  Can't wait to try new things and to soak in the collective wisdom of these forums.  Thanks!

    PS I have an MES40 smoker, and also a Weber Kettle grill.  Also, I just bought an A-maze-n - Pellet Smoker, but have not used it yet.
