Greetings fellow Meat-Lovers, from a Guy in Chicago !!

    Hi, Guys:

    I live in Chicago, Illinois - and I am glad to have found this Forum. 

    Many of you seem to be quite knowlegable about this stuff, so I am eager to learn this ancient craft from you venerable masters !!!

    Many of my friends have been working the Atkins (Low-Carb) diet, in an effort to lose the weight that seems to sneak up on many of us during middle-age.

    Beef jerky seems to be perfectly suited to the plan - as it delivers a strong "flavor-fix", and helps curb the appetite between meals.

    Unfortunately, the most readily available options in the pre-packaged market, seem to be limited to "Regular", "Peppered", and "Terryaki".  

    These flavors are great for the occassional snack, but I suspect that there is a world of flavors that could be experimented with, to make jerky more exciting, and provide the variety that would satify someone who wants to enjoy jerky on a daily basis.

    I am aware that there is exotic "game" jerky available - but that is way beyond my research budget, as I am still very new to this.

    Also, I know nothing about "smoking" meats, but it appears from reading some of the treads, that this is a subject that will soon catch my interest.

    I look forward to conversing with each of you fine people, as I work to expand my knowledge of this most ancient and worthy craft.

  2. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
