I have been smoking for about seven months. I am using a 30" Masterbuilt electric smoker. I am getting the hang of time and tenderness of the meats I cook (patience is key) but it seems my smoke flavor is lacking in the wow department. How often should you actually smoke the meat? Do you feed chips the whole time or just the frosty few hours or what? I have smoked babies and Boston butts and chicken. The chicken has been the cleanest smoke taste but the pork seems to have a weird taste. Any and all advise is welcomed and appreciated.
