Getting started on my pork loin.

  1. I have an 8 1/2 pound pork loin to smoke. I've only smoked one loin some time ago. It was b-e-a- utiful. I just kinda spaced on the time and temp. Any suggestions?

    I try to smoke loins at around 250* until an IT of 160* and slice to about 1/2" for a good plating. It is also good with some bacon laced across it. Good luck
     
  3. I usually smoke mine at 225 till it gets an IT of 160-165. That usually means a 5-6 hour smoke since I use the loin roast not the tenderloin.

    If you are spaced on time cut it in half. 145 is now acceptable with pork IT. Good luck.
