Hey everyone! I threw on two butts Friday night, 16 pounds total. They hit the smoker at 250 degrees at 8 pm, averaged 280 for my temp and went no foil the whole time. With my trusty Maverick by my side, I was notified the IT hit 198 at 5:30 AM! I took the meat off the smoker, loosely foiled and popped it into a 150 degree oven so I could catch a bit more sleep. Pulled the meat around 8 am. Hopefully these pictures post right as I'm using my phone! Before being rubbed with my homemade concoction. Just off the smoker Money shot! Pulled! To be honest, I didn't even taste test the meat! It was for a couple of friends and I've done enough pork smokes (on my wsm) to know that it is going to be better than good!
