First time pastrami

    How does the smoke look?

    I always worry about getting good smoke.

    I want to try my own corned beef next time.       (  If this turns out good  )

    Just wrapped it in foil with 2 cups of beef broth.

    Took 3 hours to reach 150 IT.

    it looks like good thin blue goodness... the good thing about the UDS.. if you see white smoke... its steam.. just cause you through a full load of meat on.. but, so far the cooks Ive seen you cook... your not loading it up ... smoke on sir!

    take back... my bad.. after looking at my logs... I did take mine to 185IT...... so Farm!!!!

    Probe around 180 and maybe pull before 190...should be buttah by then

    Very tender and juicy.

    I loved the rub but the wife said it was too hot.   LOL   I love the butchering pepper.
