First smoke

    Okay I survived my first smoke today! I went with 4 racks of Spare ribs, and of course, two fatties. Wow, I see what you mean about the fatties! The ribs were cooked with Jeffs Rub and the 1-2-3 method. They turned out great, lots of complements with the relatives that were invited over as the ginne-pigs...

    They were not quite fall off the bone, but very tender. I kept them naked but had sauce on the side. About half the crowd wanted sauce, the other half said it wasn't needed.

    For a true fall off the bone finish like the restaurants do, I take it they are parboiled first which of course takes out all the great flavor?

    Sorry there was too much excitment for pixs, but I will do them next time.

    Congrats on the smoke! Sounds like it was a great success!
    But dude! You gotta slow down and get those pics!
    One of the very first things you learn on this site is: Your family and friends WILL get used to you taking pics before serving/eating! [​IMG]
