First Smoke 40" MES - BBs and Corn on the Cob

    Seasoned my new MES 40BT today. Don't have any of the new gadgets yet (Maverick / AMZNPS) so going at it tomorrow bare bones - relying on the MES itself.

    Planning to smoke a rack of BBs unfoiled on 2nd rack for 4-5 hours at 240° (thinking that temp should allow for any swings). Will rub down with mustard and a commercial rub this evening. Smoking with apple and testing for tenderness with a toothpick. Going to cook some corn in the husk (with butter and lemon pepper) as well - figure the last 2 hours of the smoke for the corn on the top rack.

    Any comments on that plan are welcomed. Should the ribs be foiled to rest after completion or can they go right to our plates?

    I usually let them sit for 10 minutes or so before slicing up, unfoiled. I do ribs at what the Masterbuilt SAYS is 275, but depending on what rack I'm on, it's between 250 & 285 true temps & take them to about 4- 4 1/2hours. The bend/toothpick test tells me when they're done.

    Thanks Tumbleweed. I went ahead and rolled with the MES set at 240. Cooked for 4 hours with the corn in the last 2 hours. At 4 hours the toothpick slid right on in. I slathered 1/2 the ribs with sauce to compare with the "dry" ones and smoked another 20 minutes. Both were great but leaned more towards the sauced ones. 

    My wife said the ribs were "outstanding" and the corn "heavenly". Success! Very pleased with the new MES, recovery time for temps after I sauced was nice and quick too.
