First baby backs in the new Royal Oak smoker

    As many of you have already read, I purchased a new Royal Oak electric smoker and finally have it seasoned and ready for its first load of goodness! We have a potluck luncheon after church today and I thought a small load of baby backs would be a good start on what I hope to be a long and successful relationship between me and the smoker.

    Last night, just before I hit the sack I built my own rub and patted it down on these little beauties!

    Being at the church I was hoping to slip out and grab them and get them sliced up for some Q-view but all I could manage was the two pictures here. I was purt near mauled as I walked in with them after their resting period. If a pile of bones were good camera fodder then we’d be in business!

    I have to tell you, for the $70 I paid for this smoker it far exceeded my expectations and provided some very good grub! Very moist and tender and, as you can see, falling off the bones!

    Just prior to slicing and the line was already formed and no-one was interested in me taking pictures! The results of the 2-2-1 method!
    The rub was my own concoction and apple cider was spritzed the first hour and was added to the foil pouches.

    No less that 12 people asked me to make more right now, a few others wanted me to bring some to their houses and one lady confessed she didn't like smoked meat but that those ribs changed her mind. I cannot think of a better compliment than that!

    Looks great, glad the smoker is working out and producing some great Q, and glad folks didn't tear you apart going for the ribs.

    I was very impressed with the cleanliness of the smoker. It looks like a very good unit. Do electric smokers tend to keep like that? I've never used one.

    What is the tiny hole in the back where you have your thermometer probe coming thru?

    I'd be willing to bet that the stainless steel interior won't be all that pretty all that long if I don't stay on top of it. I'm sure it'll see some Easy-Off once in a while! [​IMG]

    That tinly little hole is the one and only vent to allow the smoke to escape. There are some very small holes in the bottom of the unit to allow it to breathe but, other than that, there's no fire that needs oxygen and this is essentially just an oven that allows me to create nice amounts of tasty smoke!
