Looks great. I see you use an AMNPS (A-MAZE-N Pellet Smoker). I have just ordered mine and can hardly wait to try it on cheese like this. Thanks for posting.

Try some Cojita Mex. Cheese. Kinda like farmer's Cheese and takes to smoke like a fish to water.
