I finished my custom build, converting a gas fired cabinet smoker to a pellet fired smoker by installing a Pellet Pro from Smoke Daddy. It is made from a repurposed computer server cabinet. During my initial trial in this uninsulated unit, I had a set temp of 190 and could only hold an actual chamber temp of 165 max. It was 32 degrees outside and this is a large chamber, with a lot of air gaps / leaks, so it wasnt too surprising that it had trouble keeping up. I asked Smoke Daddy if there was a controller / auger adjustment that could be made to get the temps more in line, but they told me there was not. I decided that insulating was my best option. I made a cover from Reflectix insulation and fired it up again tonight. It was 34 degrees outside, I had a set temp of 190, and as you can see, my actual probe temp was right in line at 189 and I had 3 Tappecue probes at varying spots in the chamber that were right in line. Overall I am extremely happy with the outcome. Bacon tomorrow night and andouille sausage next week. . . .
