Cornish Math

    I'm planning to smoke 3 hens tomorrow but I'm worried about being done to early.

    If I run my smoker at 250-275 I know a 4.5-5 lbs chicken takes 3.5-4 hours. So if change the chickens to 22oz (~1.5lbs) hens should it only take 2.5-3 hours?

    Cornish are tiny and not very thick in the thickest part. I haven't timed them but I'd be surprised if they took 2.5 - 3 hours. Plan for that amount of time but have some foil and a cooler ready for if they are done too soon.

    It would also depend upon whether or not you stuffed them. Because cornish cook so fast and are out of the danger zone fairly quickly I usually make my sisters recipe a pork sausage/cranberry stuffing for them.

    With Bigger birds like Chickens and such for safety reasons, I do any stuffing in a casserole dish.

    going to do some today and while i always go by temp, in my set up they take around 1.5 hrs.

    I have never smoke any cornish hens I have always do them on the regular grill. I have also thought it was going to take too long for a weekday smoke after work of course. So chef would you post your smoke and let me know how long they take so I can smoke some during the week.

    you got it.......i'm also going to do csr's so all in all it wil be a short smoke.

    right now i am at about an hr with the smoker running @ 250.......not having luck getting it up to 300.

    chefrob, what is the temperature there? Tomorrows forecast for here is low 40s.

    DONE! It took about 2 hours at 250. But it was so worth it!
