Brisket

  1. Smoked brisket this past weekend which was delicious and had a nice smoke ring

    Cook temp was around 220 until it temp hit 160 then wrapped in foil with Apple
    Juice until it was 205 (was when a toothpick stuck in and pulled out with no resistance) then rested it in a cooler wrapped in towels for an hour.
    And the rub I used was smileys brisket rub.

    Mmmm good brisket it was.

    I know, my invitation is lost in the mail again..... ya know I am starting to think I may need a new postman!

    Sure looks good, a very pronounced smoke ring. Wasn't it a beautiful day to smoke?
