This is the biggest one I could find in short notice. It was just a flat of 4.42 LBS for $4.79 a pound![IMG]

In the smoker at 230˚ for 8 1/2 hours, with 5 1/2 hours of Hickory with my A-MAZE-N-SMOKER.

Foiled at 165˚ INT, and back in until it hit 190˚. Then I left it in, but killed the heat. It coasted up to 193˚. Then I left it in for another 2 hours, and took it out. It was at 185˚ when I removed it. It was tender & juicy, and GREAT!

Sprayed a mix of Apple Juice (8 oz) & Worcestershire Sauce (4 oz) every 1 1/2 hour, after first 2 hours.

    From Wegmans:

Rubbed & ready for over night in fridge:

    Ready for smoker:

Filled with Hickory Dust & lit one end:

Fresh out of smoker (this is half of it):

    Half of it sliced:

Good looking brisket, Bearcarver.  Can't believe they're getting that much per pound though.  We've been buying them here at Sam's Club for $1.98 (full packers).  Guess I'd better get a couple stocked up.

Yeah, I gotta shop around a little better next time! I just kept putting it off---then I said, "I'm getting one NOW!" That was the best I could do in a hurry.[IMG]     But boy was it tasty & tender & juicy!

Thanks all of you guys for looking and your real nice comments!

Looks delicious! Love the horseradish with the brisky. I almost bought a 5lb brisket this weekend from Publix but they wanted $4.99 lb. for the sucker because it was all trimmed up. I picked it up to check it out and my wife looked at me like I had lost my mind. She says "$25.00, you better put that back or you are walking home". Hey, I'm the man and cook of the house, if I want it I'm buying it. [IMG]  So, naturally I put it back.  [IMG]

    Thanks Shooter1,

Hopefully I'll never have to pay that much again. You made a wise decision.[IMG]

    Thanks Princess,

The only thing I grow is tomatoes & hair. I realize home made horseradish could be better, but the best commercial horseradish made comes from just a few miles from my home town----Kelchner's (Dublin, PA) IMHO.

I think Mrs BC grows those damn baskets![IMG]

    WOW, that is awesome,

Hey why the heck is brisket so expensive in our neck of the woods

  19. Horseradish is so necessary!

    Beats me!

It's supposed to be a poor cut of meat, only edible if you make it like we do, or in the pressure cooker, or crock pot.

But actually only edible the way we make it ![IMG]

Maybe it's because this is a PA Dutch area, and all PA Dutch & German wives have & use pressure cookers.
