Went to HEB and picked up a brisket to smoke tomorrow and while looking around, I noticed that there were three options.
1: best value
Packer brisket, not trimmed at all for $1.96/lb
2: best cut
Packer brisket, not trimmed, but USDA Prime 1 cut for $2.99/lb
3: easiest
Packer brisket, trimmed, ready to go for $3.79/lb
I ultimately went for the best cut, but I'm wondering if it makes $1/lb extra. I know to each their own, but just wanted an opinion.

Just amazing the differences in prices. I picked up an untrimmed, Choice grade point yesterday and paid $3.68/lb. Untrimmed Choice grade packers were $3.38/lb. Untrimmed flats were $4.19/lb.

I buy on price, but pay attention to grade. Personally, given the OP'S choices, I would have picked up the Prime grade.

Great price for Prime...JJ

I've tried all 3 but the method of properly cooking a brisket is conducive to making something special of an "inferior" cut of meat. Given that premise and personal experience, I've found that if I do my part and have patience I can achieve superb results with the select grade and trim it to my own liking rather than what someone else thought would sell.

Just my.02 YMMV.
