Bologna For A Road Trip

    Mixed up 5 lbs of bologna yesterday for a small road trip to Ky to see some friends next week.

    Bologna mixed.


    I only had 2, 2 1/4" casings left so i improvised.



    Hanging at room temp for 1.5 hours before into the smoker.


    In smoker at 130* Amznps tube with hickory smoking.

    Cut the experimental bags from the chubs to cut the loops and rings off.

    Damn it worked good.


    Vac sealed into new bags for the trip

    Very nice! Were the blooming bags regular vac PAC bags or something else?

    Just regular vac bags. I use a vacmaster pro260 and their bags.

    Pull the chubs from smoker when you get an IT of 150, vac bag (no cold water) and hang, they will IT of 152 on their own. I like this way. (Caution: Can be expensive with bags)

    Here is one of the chubs cut up with some smoked pepper jack i took to KY.
