Adam You got that right...you learned your probes are to short, plus your learning your smoker. Thumbs Up
Looks like you done great with your first smoke! I also have problems with tough chicken skin on some of my cooks.

Now get yourself a bunch of wood and keep learning. :biggrin:

Thanks. It looked good till I added bbq sauce. Then it turned black.

I had my farm select cut 2 years ago, so I have a bunch of limbs and tops to use. Hickory, oak, cherry and maple.

I am going to add a bit plate to the vertical part and use a tube for smoke I think

I am lovin this thing.   I have a wood burning uds so I kinda already knew the fire basics.

Its real easy to control temps by just using the wood, I kept the intakes and exhaust open the whole time.
