Until now, I've only done one BCC smoke, and it came out rubbery. This time, however, was a huge success! Applewood chips, I kept her at around 230-240 fairly consistently. Temperature consistency in the smoker was a huge factor in this smoke, as I think I keep dropping temp last time using the ECB. Can't stop talking about my badass WSM in every post, ya'll! haha 3 birds from the organic section (HUGE difference) rubbed em and brought them to 167 in the breast. Insanely good!!! This time I got my rub in under the skin, too. Stella wants them so bad! Patience, young lady... Those birds were pretty serious. One was devoured, another delivered to a friend wrapped in foil and towels (surprise!), and another stripped for smoked chicken salad with grapes and walnuts and stuff Also made a fatty!
