I have made Bear's Beef snack sticks and his Beef logs before with great results, so decided to get a little wild with the recipes and execution. I slightly modified the snack stick recipe to personal taste, then increased the size of the sticks dramatically to log size and smoked 'em nekkid with no casing They are about standard summer sausage size and made with 90% lean Beef. While they were fresh off the smoker, I blotted the fat with paper towels to soak up the droplets on the surface. I couldn't wait for them to cool and just had to have a taste test. MmmmMmmmMmmmMmmmmMmmmmm! Yummy!
