The wife is taking a short trip with her sisters and left me home with the hounds. So thought I'd do a little smoking and turn up my beer consumption just a bit.
This is a low carb meal for those of you like me that watch such things.
The rub is very simple.
1/4 cup course black pepper.
1/4 cup kosher salt
1tsp paprika
1tsp garlic powder
My smoker tray is 1/2 filled with Todds hickory dust.
Smoked to an IT of 195 is prefect for my taste.

Slaw was made with Ranch Dressing rather that the typical high sugar recipe.
As you can see I brought out the good Foamheart China for the occasion of the big LSU and Texas Tech wins today. LOL

You know Al.... since I took to your method of cooking to IT rather than time the product has improved 100%. Ribs were the only thing I cook by time and never cook to IT temp. Your method is solid and now my new standard. B
