Kind of a crappy day today, so good time to get some BB Q going. Took lots of q-view.

Dropped a couple slabs over to a buddy and the guys at work will get some [IMG]. Did 6 slabs, around 17 lbs.

I was poking around the forum and came across a thread about pulling the membrane off. It worked out great, so thanks and credit to the guys for posting great info. Here's a couple pics.

    Continued [IMG].

In the smoker at 225°, smoked with Hickory.

After 1 hour, mopped with apple juice.

After 2 hours, mopped again with apple juice.

2.5 hours, pulled to wrap in foil. Wiped down with Bullseye BBQ sauce, wrapped and back in the smoker for another hour and 15 min.

4 hours, removed foil and wiped with Bullseye BBQ sauce again and back in the smoker.

Dave - great pics and awesome results! The simple rub with mustard looks like a winner for those sweeties. Great job! [IMG]

Ok...on to the finish [IMG]. Very happy with them. Juicy and as tender as you can get without actually falling apart off the bone.

    Finished!!

  6. Those look great. Out here on the west coast I've got two racks going right now in my brinkman water smoker on a rainy/crappy day too. The cool daty has kept the temp down so I'm leaving them in a bit longer than normal.

My camera is MIA, otherwise I'd post pix too. I hope mine turn out as great as yours. Happy smokin!

Dave, those ribs look really good. I'm going to try my next batch like yours. I like the taste of Bull's Eye BBQ sauce also. Thanks for the great Q-view and the pics about removing the membrane.

    Great rib smoke [IMG]

Thanks guys [IMG] . I'm having some fun with this stuff. My girl thinks I'm a little nuts with the pictures..lol. My buddy called and said they were the best he's had and the boys at work are going to enjoy a few slabs for lunch.

It's a toss up for me whether or not I prefer BBs or spares [IMG] . There is a lot less fat and waste with BBs, less meat too, but what's there is much leaner. I paid $2.98 (usual price at the wholesale clubs) for these vs $189 for spares. I'm leaning towards the BBs. Opinions?
