I've been smoking for a couple of years now and I have a nagging question that, no matter how deep I dig, can't find an answer to.

-  On baby back ribs, is there a trick to getting rid of those little bones, the ones in between the long rib bones?  I have tried cutting them out before smoking, pain in the butt.  I've tried kind of snapping them out after smoking but I don't seem to get them all out.

When I cut my ribs, my knife always seems to find those little bones and I have a hard time cutting the rib cleanly. Now, I try to get the smaller racks that I can find but they are usually over 3 pounds.  A lot of the competitive smokers talk about using 2 1/2 pound racks.  I assume they are getting those from their butcher, not buying at a supermarket.  Are they getting the specially cut?  Narrower, maybe?  Seems if they were a little narrower, those little bones would get cut off.

If anyone has an easy trick, your assistance would be greatly appreciated!
