Any experience with New Braunfels vertical?

    This is a smoker similiar to the ECB, but with a door that opens the full length of the smoker, top to bottom. I do not know the exact name of it. I was wondering if anyone in here has had any experience using this particular unit? It was given to me because the previous owners had no idea how to get it going properly. From what I can tell, there are two grates, a charcoal can, and no water pan. Do I absolutely need a water pan, or can I use it without. If it turns out that I need one, where can I pick one up, or are there any ideas to make my own?

    I am so sorry that I sound like a noob, but I would love to get this smoker up and going, but need someone with experience to tell me how to use it. I fully intend on emersing myself, and learning as much as possible in these forums. I will be as good as some of you, I hope. Thanks so much.

    Easy, I use stainless steel mixing bowls for my smokers. Sam's has them.
