Hello, everyone!  I'm in Montana and love to grill a lot and smoke sometimes.  At the present time, I like to grill over open coals, charcoal and propane if need be.  I used to do a lot of smoking (game and fish) and have decided to get back into it on a slightly smaller scale.  I actually used to use an old refrigerator for smoking and haven't found much better but I'm looking around.... don't have near as much to cook anymore.  We DO have an Orion Cooker that we have grown to love.  I've actually smoked some fish, sausages, turkey and game hens in it.  Doesn't take very long and, so far, works pretty good. I've learned to soak mesquite chips in water for a few hours and then to fill the 'splatter' tray with the chips and some white wine.  The Orion gets very hot, very fast and actually gets the wood chips smoking pretty quickly and, being in a sealed unit, seems to spread the flavor through pretty well.  I know it's not real traditional so I'm really considering something a little different.  Thank you VERY much for all the amazing recipes and tips you give on here.  Can't wait to hear from others!
