Guess I will start off by saying that I bought a smoker and hopefully can get some great tips on how to smoke meat and sausages. I'm a local girl from Hawaii and miss good smoke meat. Hard for buy around here so thought I'd make my own. Can't wait to check out all the posts, forums and newsletters here. Again, Aloha from Hawaii!!!

I lived in Waimea on the big island for a while. At the time there was a BBQ vendor at the Home Depot and another guy that did chicken only at different locations.

What kind of smoker did you get?

If you can get your hands on Kiawe it's an excellent wood for smoking.

If you find yourself in Kapaa on Kauai check out chicken in a barrel .
