First jerky I made. I marinated overnight after slicing with a slicer. I used the Reynolds handy vac and it worked nicely. Smoked about 3hrs at 150*. All in all it went very well. I did have a few pieces touching and the smoke did not penetrate there other than that all was fine.I guess the smoke penitrated but it was not as dry as the ones not touching. Will have to remember NO TOUCHING of pieces.
