I am putting in an outdoor kitchen and have a question about the side burner. Will 12,000 btu be enough to get a pan hot enough to blacken fish? How about boiling big pots of water? I like to cook frogmore stews outside and I'm hoping the heat will be enough so I can stow away my outdoor cooker and just use the side burner. Any ideas?

  2. I don't pretend to be an expert on btu's, but I just had an outdoor kitchen put in it has two side burners at 30,000 btu and it could boil a 55 gallon drum i believe. I do love the outdoor kitchen. Ours was completed right after Christmas and I have cooked on it almost every night since. By the way, I,m a Gamecock too, now living in South Florida. Good luck with your outdoor kitchen. And Go Cocks.

My side burner is 13,000 and I've used it to blacken fish and it worked great. Smoke stays outside lol! I haven't used it for large quantities though so can't help you there, but I would guess that it would work well enough. The problem I have with mine in fact is that even on low, it's hard to do a slow simmer with butter (and capers and dill) without constantly watching it to not burn it.
