had trouble with new char griller

pork shoulders turned out great but had to babysit smoker the whole time in order to keep temp. in cooking range. Used a combination of kingsford charcoal and mesquite wood.
 
Do a search for char griller mods. Some of these mods are to help maintain and controll  the heat.

 It does get easier.
 
Yeah... the mods are a must for the Char-grillers. Once you have the mods done you should be able to go 2-4 hrs. between fuelings.
