threw some ckicken on the smoker while painting the house

started with some thighs stuffed in my muffin pan

split a chicken in half

one leg quarter

smoked for a couple hours

covered with jalapeno pepper jelly for a nice glaze

the jalapeno pepper jelly works great for a glaze   not too hoy  just a little extra zest to the chicken 

all were devoured a we watche some football

Man oh Man there Rick that looks awesome. Now I might even come over and help paint but I really don't like to paint. Can I come over and just point and drink all your beer.?? I'm really good at that after being the boss for 20 years.

Rick, that's some great looking bird!  I like the sounds of the jalapeno pepper jelly but probably can't find it around here.

Probably a dumb question, but what is the advantage of stuffing thighs in a muffin pan, as opposed to just setting on an open rack?

I've seen it before, but never asked.

terry      i ve done it both ways  i like to leave the bones in if the thighs fit in the pan,  but if they are large then i debone em,   i think they taste better if you leave the bones in,   I wonder why though?
 
That is sure one beautiful batch of bird!!   The skin looks amazing!   Did you brine at all or just season, that whole bird looks so plump.  Plus, I've never seen a muffin pan with drain holes before - custom job?  What temp were you at to get such great looking food in just a couple hours?   and thanks for sharing the pix with us.
