Had the day off so might as well do up some smoked goodness.  Started with a 3 1/2 lb chuck roast.  Injected with a mixture of Johnnys Au Jus Sauce and some pale ale beer. Then rubbed down in a mixture of my own spice blend and some crushed red pepper, and wrapped in saran wrap and put in the fridge overnight.  Fired up the Traeger smoker with some mesquite at about 220 degrees and set the thermo temp alarm for 165 for foil then up to 208. here's a couple pic's thus far.  still on the smoker so i'll have to put the money shots up later!!

Yes your chuckie looks great so far and I'll like the others will have to check back in to see how it comes out.
 
Thanks, it was great!  Very moist, nice smoke ring, and the sammy was topped with my favorite slaw recipe and some of the pulled pork finishing sauce that was actually quite nice with the red pepper flakes and the bite of the vinegar.  This was my first chuckie so I was more than happy (along with everyone else) with the outcome.  Looking forward to trying out other things.
 
mmm.yum. What is it with all the chuckies recently?? Boy, everybody's been playing with them.  I've always loved a good pot roast, figured they'd be great to smoke; clearly great minds think alike.  That looks really tasty!  Anything you'd like to share about the sides????
