hey everyone, Louisiana Newbie here, Im so excited about this new world of smoking some meats. I just got my new Mes electric smoker,and am smoking today for the first time. Im smoking a boston butt, guided by the professional isntructions on here. Im enjoying the heck out of it. I am finding out though that my new smokers built in temp guage is running about 40 degrees higher than the actual temp. I have tried 2 seperate digital thermometers and they are both telling me the same thing. So, at temps of 275,Im only getting about 230-235 with the other guages. Im not sure it if should be that far off,but right now Im smokin.lol I took a few pics and am now in the foil process. Ill try and post a pic of the finished product later. I look forward to learning from this forum and also getting to maybe now some of you in the future.

Welcome to the SMF. Good idea to compare temps, as original therms aren't very reliable.Knowing this, i think you'll do some good smoking and soon too. It's all good my friend.
 
Hello and welcome to SMF. It looks like you are off to a great first start. On the temp thing you might want to look into a Maverick ET73 dual sensor or something similar. They will make your smoking life a lot easier

I know lectro from a local fishing forum and can say that he said the butt  came out great.

 Looks like the problem is now solved.

First off Welcome Lectro to SMF.  Sometimes you might be in a hunk of fat and that could throw you thermo probe thingy off. But it's nothing to really worry about. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

sorry for not getting back, been busy eatin all that pork.lol   The butt came out beautiful and tasty. I ended up having to pull it out of the smoker before it hit the 200 mark,cause it was gonna take too long,and I had to go get a few hours of sleep before work. I think it would have been done earlier,if I had found out my  oven temps were off sooner. Eman was the one who gave me the tip of the probe in the tator.  For those of you who are wondering about my temp problem, it wasnt the probe that was off, it was the actual oven temp that was off 40 degrees. Im gonna try and call masterbuit,and check to see whats up wit dat. Look forward to learning  from you pros on here on many of the recipes and how to's. Oh, here is a pic of the finished product.
